Smoked Salmon and Cucumber Finger Sandwiches

In all truth I don’t think anyone really needs a recipe for a sandwich as simple as this. But I thought I better post about it to complete my Afternoon Tea series.

An Afternoon Tea Party

So enjoy a classic and simple sandwich, a must have afternoon tea item or perfect for lunch.

Smoked Salmon and Cucumber Finger Sandwiches

Ingredients

  • 1 tablespoon cream cheese, softened
  • 1 teaspoon finely chopped fresh dill sprigs
  • 1 ½ teaspoons lemon juice
  • Salt and pepper to taste
  • 8 slices wholemeal bread
  • 8 slices smoked salmon
  • 1 small Lebanese cucumber, thickly grated with a peeler into long strands

Method

  1. Mix the cream cheese, dill, lemon juice, salt and pepper in a bowl
  2. Lightly spread 1 side of each bread slice with cream cheese mixture
  3. Top 3 slices with smoked salmon and cucumber
  4. Sandwich with remaining slices.
  5. Using a sharp knife, remove crusts
  6. Cut each sandwich into 3 fingers
  7. Serve immediately or chill in fridge slightly

Tips

  • Traditionally you would use white bread to make these type of sandwiches for an afternoon tea, but I used wholemeal to try to be a little healthier
  • I had this sandwich in a wrap the next day for lunch, so it really does not need to only be served as afternoon tea. In fact Smoked salmon and cream cheese goes so well with crusty, rustic breads, especially rye
  • Using a peeler to grate cucumber strips will give you an even slice and keep the cucumber slice intact

  • Some other yummy additions are fresh lettuce, roquette, tomato, carrot, capsicum, alfalfa sprouts or pickles
  • To make the sandwich a very healthy lunch option, omit the cream cheese or spread very lightly. Use a rye bread or rye wrap. Add lots of fresh greens and veggies
