Grilled Salmon with Vegetable Stir-Fry

In line with my recent health kick I bring to you today a very tasty, filling and healthy meal. This was my first time cooking fish and I was pleasantly surprised with the results.

The salmon turned out so pink and perfect. The texture was like eating velvety butter, it just melted when prodded with a fork. And the skin was amazing: salty and as crispy as a cracker.

I was a little stuck picking the side dish to go with the salmon and settled on a simple stir fry. But you could really put any vegetable or salad as a side dish with the fish. Does anyone have any favorite sides they could suggest?

This was a very filling and delicious meal. And very healthy too: yummy fresh fish (with plenty of protein), lots of vegetables and many nutritional essentials.

Grilled Salmon

Serves 2

Ingredients

  • 2 200g raw salmon steak, skin on
  • olive oil, to run onto salmon skin
  • salt, to run onto salmon skin

Method

  1. heat up a fry plan or grill
  2. rub olive oil onto salmon skin
  3. rub a generous amount of salt onto salmon skin
  4. place salmon onto hot grill skin side down
  5. cook for 5 minutes
  6. flip and cook on other side for 2 minutes
  7. leave to rest for 5 minutes
  8. serve with a side of your choice
  • So vibrant and fresh looking. Yum!

Vegetable Stir-Fry

Serves 2

Ingredients

  • 1 teaspoon olive oil
  • 1 brown onion, chopped
  • 1 whole broccoli, cut into florets
  • ½ capsicum, deseeded and chopped
  • 10 button mushrooms, quartered
  • 1 clove garlic, mashed
  • 1 teaspoon salt reduced soy sauce
  • 1 teaspoon oyster sauce

Method

  1. heat up oil in fry pan or wok
  2. add the onion and brown slightly
  3. add the broccoli and cook until softens slightly
  4. add the capsicum, mushrooms and garlic and cook until vegetables are soft
  5. stir in the soy sauce
  6. stir in the oyster sauce
  7. cook for another 2 minutes
  8. serve

Notes

  • you can add more or less of the two sauces depending on your tastes

  1. Oh, welcome to the wonderful world of salmon! My favorite way to make it is broiled with lemon and dill, or broiled with more Creole style flavors (cayenne pepper, cumin, and paprika). I usually pair it with light mashed sweet potatoes and steamed vegetables. Mmmmm!

  3. I am not a fish person, but I want to tell you the stir fry sure looked lovely! Your fish did turn out just like Gordon Ramsey’s salmon does when he cooks it! That is a GOOD thing right? Maybe you didn’t need to use as many “f” words as he does when you cook! lol
